Here's a recipe for a delicious and colorful salad:
Ingredients:
4 cups mixed greens (spinach, arugula, or any other leafy greens)
1/2 cup cherry tomatoes, halved
1/2 cup sliced cucumber
1/2 cup sliced red onion
1/2 cup crumbled feta cheese
1/4 cup sliced almonds
Salt and freshly ground black pepper, to taste
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
Instructions:
Wash and dry the mixed greens and place them in a large salad bowl.
Add the cherry tomatoes, sliced cucumber, and sliced red onion to the bowl.
Sprinkle the crumbled feta cheese and sliced almonds over the top of the salad.
Season with salt and freshly ground black pepper, to taste.
In a small bowl, whisk together the olive oil, balsamic vinegar, and honey until well combined.
Drizzle the dressing over the salad and toss gently to coat.
